In this kidney bean mole, the red onion, ginger & turmeric, garlic, olive oil, chilli, red pepper, raw cocoa and parsley – all activate the sirtuin gene that helps with resilience, muscle mass and weight loss!
The peanuts and kidney beans (both legumes) provide a lovely source of protein and fibre.
Ingredients
40g red onion
1tsp finely chopped fresh ginger
1 clove garlic, finely chopped
1 bird’s eye chilli, finely chopped
1tsp extra virgin olive oil
1tsp ground turmeric, 1 tsp ground cumin
Pinch of ground clove, a pinch of cinnamon
1 medium baking potato/sweet potato
190g tinned chopped tomatoes
1tsp brown sugar (none if diabetic)
50g red pepper, roughly chopped
150ml vegetable stock
1tbsp raw cocoa powder
1tsp sesame seeds
2tsp peanut butter
150g tinned kidney beans
5g parsley, chopped

Instructions
- Heat oven to 200°C/gas 6.
- Fry onion, ginger, garlic and chilli in oil in a medium pan over medium heat
for 10 mins, or until soft. - Add spices and cook for a further 1-2 mins.
- Place potato on a baking tray in the hot oven and bake for 45-60 mins, until soft in the middle (or longer if you like it crispy on the outside)
- Add tomatoes, sugar (if using), red pepper, stock, cocoa powder, sesame seeds, peanut butter and kidney beans.
- Simmer gently for 45-60 mins.
- Sprinkle with parsley to finish. Cut the potato in half and serve the mole on top.
- Works well served with avocado /guacamole too!

Highly spiced or flavoured foods satisfy in smaller volumes. If you struggle with portion sizes, avoid bland foods and add spices!
Make sure the peanut butter has nothing in it other than PEANUTS! Check the label – NO PALM OIL!!
